Kilipi Road Greenhouse Mill Bay, B.C.
Ron Kilipi
Kilipi is a small, modest acreage of 3 ½ acres situated between the quaint communities of Mill Bay and Cobble Hill on the southern end of Vancouver Island. Ron Downey, who worked for years in the great white north of Canada in engineering, has invested the last 16 years perfecting his 3000 sq meter greenhouse. The hydroponic operation uses biological control agents to rear impeccable cucumbers which supply the Island consumer.
Ron, his wife and 4 children operate their greenhouse in Mill Bay and produce awesome cucumbers for their customers enjoyment.
Preparation of Cucumbers:
To prepare your cukes so they are not overly watery you must first salt them to draw the water out. To do this, slice your cucumbers into 4 long slices. Salt each side and allow to sit for ½ hour. The salt will draw the water out, but will not leave them salty. After sitting, blot dry and chop into desired thickness. They are now ready to add your cucumbers into your salads and other tasty dishes!
English Cucumber Potato Salad (vegan friendly)
Red Potato Fresh dill
Prepared Cucumbers Salt and Pepper
Olive Oil Red wine vinegar (or vinegar of your choice)
Cube your precooked or leftover red potatoes. Make sure they are not overcooked, or they will become mushy. Chop your cucumbers into small cubes or slices and add. On the side, mix olive oil and your favourite vinegar, salt and pepper, and finely chopped dill. Adjust to your taste. Drizzle over your salad and toss. If you prepared cucumbers properly, your salad will keep fresh all day. Enjoy!
