Farming has been in Lloyd Hiebberts family for eons, tracing back to the Peace River country in Alberta and the United States. Hiebbert farm was acquired from his parents over 44 years ago when they made the decision to switch from farming to caretaking of the lighthouse.
The 47 acre parcel of land is tucked between Nanaimo and the Cedar area on the edge of a lake known for its freshwater fishing, Quennell Lake. Of these 47 acres, Lloyd has allocated 27 acres to the farming of potatoes. The nutrient enriched soil and clean water irrigated off Quennell Lake creates prime growing conditions for Russet, Red and Yukon Gold potatoes. His crop yields over 500 tons of premium potatoes which are distributed exclusively from Victoria to Nanaimo. Old Fashioned Scallop Potatoes
Yukon Gold Potatoes Salt and Pepper Canola oil
Butter Whipping cream
Onion Flour
Use ingredients depending on the amount of scalloped potatoes you wish to have at your dinner table.
Slice onions into rings and throw into very hot pan with oil. Stir onions until lightly caramelized-do not overcook.
Slice onions in one direction and line the bottom of a casserole dish that has been greased with butter. Sprinkle with salt and pepper to taste. Dust with a Tbsp of flour, then a layer of caramelized onions. Next add slivers of butter. Repeat process, potatoes, salt and pepper, flour, caramelized onion and butter until you have filled your dish.
Take whipping cream and lightly scald, but do not bring to boil. This keeps the cream from curdling while in oven. Pour the scalded cream over your entire dish.
Cover and place bake at 375 to 400 degrees, approximately 1 hour until potatoes are lightly browned and fully cooked. Bon Appetite!
