Edward & Rennie Gamboa

Gamboa is a true family oriented farm consisting of 2 greenhouses equalling 1 ¼ acres on a 6 acre parcel in Cobble Hill. Edward Gamboa’s roots in farming go back over 3 generations based in the Philippines harvesting sugarcane. After immigrating to Canada the family bought their greenhouse in 1989 and transferred their drive and fervour for farming to hot house growing.

Today, Ed, his son and daughter in law are dedicated fulltime to growing while Mrs Gamboa looks after the bookkeeping end of the operation. Together they nurture and cultivate cucumbers, tomatoes and cherry tomatoes of supreme quality for the fortunate consumers of Vancouver Island.

Tzatziki

2 Cups of thick yogurt 1 Tbsp Olive oil
4-10 Cloves of garlic, finely chopped 2 tsp Lemon juice
½ Cup of diced or grated English cucumber 1-2 Tbsp Finely chopped fresh dill and/or fresh
Patted dry to remove moisture mint (optional)

Prepare all ingredients in advance. Combine oil and lemon juice. Stir in yogurt slowly, making sure it
Completely mixes with the oil and lemon juice. Then add your garlic according to taste and the
Cucumber. Mix really well, add the dill and mint if you like and serve well chilled. Great with pita bread and tortilla chips!
