Echo Valley Farms Qualicum

John & Susan Walsh

Nestled in between the Beaufort Mountains and the Straight of Georgia in Qualicum is the astounding 400 acre Echo Valley Farm. John Walsh is a third generation farmer as well as third generation Vancouver Islander. John grew up on Echo Valley Farm which his father started in the early 50’s.

John is a staple in the Vancouver Island farming community and is committed to keeping agriculture strong and thriving on the Island. Also, John’s love of his land shows through his partnership with Duck’s Unlimited. Together they had created a wetland project to provide wintering habitat for water fowl wildlife.

The Walsh’s along with their 4 children operate Echo Valley Farm year round. Great water clean air and solid environmental practices produce approximately 4 000 000 pounds of 5 varieties of potatoes yearly! 100% of Echo Valley’s potatoes are consumed by Vancouver Islanders. All carefully selected for flavour, nothing tastes better than Vancouver Island Potatoes.

Country Potato Pie

2 Large grated Russet potatoes Beat together:
1 Med onion sautéed ½ tsp salt
1 Cup grated old/strong cheddar cheese 2 eggs
2 Tbsp butter 1 cup milk
Fresh Parsley for garnish (optional) 1 tsp paprika
½ tsp dry mustard

Heavily grease pie plate with 2 Tbsp of butter. Fashion pie crust out of grated Russet potatoes. Add grated cheese, and sautéed onions. Top with remaining beaten ingredients. Bake at 375 degrees for 45 minutes! Enjoy your old-time Country Potato Pie!
