Jimmy & Marie-Josee Legrand

Jimmy Legrand of Comox Valley Productions comes from a long line of dairy farmers-4 generations in fact! Born in the French Alps, Jimmy’s father passed on the old tricks of the trade while incorporating his own personal touch. Sr. Legrand combined his passion with the practical matters of the farm by jumping onto his cross country ski’s to herd the cattle. As you can imagine the speed, agility and athletics such a routine would entail, Sr. Legrand went on to compete in the 1964(Austria) and 1968(France) Olympics. Jimmy himself, competed provincially after the Legrands had immigrated to Canada.

Jimmy with wife Marie-Josee and 3 children moved to the Comox Valley, a place where the local native indians call K’omoks, meaning ”land of plenty”. There they found a 50 year old family run farm which they took into their care in 2003 making the shift from dairy farming to agriculture. Comox Valley Productions boosts 260 picturesque acres which is fed by the Hilton Spring and a stone’s throw from beautiful Kye Bay. Jimmy’s farm has flourished and the 5 varieties of potatoes and the sweetest of all corn, peaches and cream, are enjoyed by Comox Valley communities and throughout Vancouver Island.

Pseudo-Fries-Better than frozen French fries!

Contains less fat the real chips and does not require deep fryer.

You’ll need:
Comox Valley’s fresh Russet Potatoes
Vegetable oil

Preheat oven to 450C. Peel potatoes and cut into stick/fries. Soak the potatoes for 15 minutes in ice water. Dry off potatoes with a clean dish towel. Thoroughly coat potatoes in vegetable oil about 1 tablespoon for every 4 potatoes. Spread in a single layer on baking sheet. Bake 30-40 minutes, turning several times. Season after baking. Enjoy!
